I brined 6 chicken breasts for a few hours, threw a chicken rub on them, wrapped them in bacon, topped with some jalepenos, and threw them on the smoker. Here is the before picture.



I smoked these at 225 for about 3.5 hours. I brushed with some BBQ sauce during the last 30 minutes. They were very juicy and quite tasty.

The brine was a quart of water, 1/4 cup kosher salt and 1/4 cup brown sugar.

Where do you get kosher salt? What makes the difference between that and regular table salt?

most stores (target, kroger, etc.) will sell it. It is a thicker crystal of salt with a little milder flavor, IMO. I am surew that normal table salt would work the same way, but I have always used kosher salt when brining.
