Kershaw assisted opening folder, easy to sharpen but also dulls quick. Some of the ones from the knife makers on the forum are also great. Ask Jason or Travis Fry, they both know their knives and I really like the ones I have from them.

The case CV knives get super sharp quick, they don't last too long but as long as you keep touching it up then you are good.
cmp154cm at about 60-61 rc hold an extremely good edge and is pretty easy to get sharp again. 1084 carbon steel at the same hardness range hold a good edge and is easy to touch up as well.

Carbon steels are typically easier to sharpen.
That said, they are all easy to sharpen if you don't let them get dull. Touch em up occasionally on some rods and you'll be fine.

Same here. I have a trapper that will get scary sharp quick. I have a Mora knife that is really easy to sharpen too, it also has a carbon blade.
