I finally pulled the trigger on the egg. I did some asparagus and chicken tonight. It was good but nothing to rave about. Does anyone have some easy recipes that will show off the capabilities of this thing? I watched the DVD that came with it and I will be trying the ribs soon.

I've only had mine a week so don't have a lot of recipes but my results have been good.

Try a spatchcock chicken. It was the most moist chicken I've ever had. Steaks are great and juicy too at high heat.

On the longer cooks, like chicken, I think the key is to keep the lid closed and let the moisture stay in there. Don't keep looking at it.

I plan to try baby backs this weekend so we'll see how a 5 hour smoke goes.

A little fire and some pecan chips


Finished product after 4 hours at 250


Pretty darn good. I still cannot make them fall off of the bone. I hope to make awesome food on this someday. I did use the plate setter.

I just bought a cypress table off of Ebay and hopefully it will be here next week. I fired the egg up at 1215hrs and it is still going strong with no more wood added.

Ribs are one of the more complicated foods to master. Looks great though! Maybe a tad bit hotter (270?) for about 3.5-4 hours.

You gotta get rid of that shiny look on your BGE smile It's too new!

(also, is that Barbi's butt in the background?)

I'm doing ribs this weekend and will try them like I have on my wood and propane smokers. Do them 3 hours, uncovered, at 225. Then put some sauce or juice on them and wrap tight in foil. Then another 2 hours at 225. Trust me, if they weren't in the foil, you couldn't take them off the grill because they'd fall apart. If you want to firm them up some, open the foil and cook the last 30-45 minutes with the foil open. They'll firm up a bit that way. Just play with your times to get them how you want them but the above wil get you in the ballpark.

I did some thick pork chops tonight on the egg and the were fantastic.

Update on this. Just followed the above on the egg. Wow. The weight of the knife alone would cut the ribs. Best ribs I've ever done, and I do damn good ribs.

These things would melt in your mouth. You could literally pull the bones right out of the ribs.

And it held temp great. Got it set and it held between 225 and 240 without having to touch it for the full cook.

What did I do wrong today? I coated the rack in mustard then a rib rub. I let the ribs sit out until they were room temperature. In the pecan smoke at about 250 for 2 hours, wrapped tightly in double foil with Sweet Baby Rays for 2 hours at 230. 30 minutes on the grill at 250. I rested them 15 minutes before cutting and they still were not fall of the bone. They were good but not fall off of the bone.

Do you have the plate setter? I think indirect heat is a big part of it. Direct heat will firm them up for sure.

Also, I go 3 hours unwrapped and 2 wrapped. Looks like you went 2 and 2, with some unwrapped time at the end. Unwrapping them at the end WILL firm them up. If you want them to fall off the bone, don't unwrap them.

You want the meat to start pulling back from the bone before you wrap them, which happens at about 3 hours. At 2, they're not ready yet, at least not in my experience.

I have the plate setter. They were pulled back over a quarter of an inch when I wrapped them. When I unwrapped them the were flexible and would bend but not break in two when held in the center. Still a work in progress. Gonna try the chicken tomorrow.

Try 3 and 2 and let us know how it goes. Mine are pulled back farther than that when I wrap.

I bought several racks for 2.97 a pound last week. I may thaw a rack out on Tuesday. I will let you know how that 3 hours works out. Keep the info coming. I am enjoying cooking on this thing. Did the shrimp recipe from the book and it was good.

Did some burgers last night at 650 degrees that came out awesome. Very juicy and flavorful. Got some chicken breasts and vegetables going right now that smell great so far. I'm loving this thing.

Thinking about some fat rib eyes again for this weekend.

I would be hard pressed to cook steaks in anything other than a cast iron skillet but I may try it once. I did the spatchcook chicken and it turned out awesome. Best chicken I have made period.

Definitely try steaks on the egg. I like the skillet method as well. This will give you very similar results as far as crust on outside and juicy on the inside, but it also adds that lump charcoal/smoke/open fire flavor.

Did some jalapeņo stuffed chicken thighs wrapped in bacon tonight that came out awesome.

One thing I'm starting to notice, as I get farther into the bag of lump charcoal, the pieces are smaller. I think they're packing tighter in the egg and preventing me from getting as much heat. Has anyone else experienced this?

I did steaks on the egg two nights in a row. Last night on the grill, tonight on the comal in the grill at high temp. I will not attempt a steak on the egg again only the cast iron skillet. I am going to try some ribs tomorrow.
