It's looking good . I also think that I am one of the few that really like a good beef rib .Lets us know how they come out .

well folks.. it's been a struggle. I don't remember the last time I had this many problems with temperature control.
The only thing I can say is I bought cheap lump charcoal from academy (oak, 12 bucks a bag).. I wont do that again..
We will see how everything turns out in about an hour when i pull it off.

It turned out OK, by ribs had some issues, but I learned a little about cooking at two different temps (so Ill know next time). I still think the large lump charcoal isnt as good as the BGE or smaller lump mesquite charcoal.. the cheap stuff is hard to maintain. Anyhow, we are eating well here tonight anyhow... 22 hours on the BGE
