brine a coon just the same but can make a big foil boat, put in on the grill & cook & baste with bbq sauce for a few hours I like it just soaked till blood is out, then salt/pepper, smothered in Sweet Baby Ray's Raspberry Chipotle and covered in foil completely, and placed on a charcoal grill while cooking burgers or steaks.... just leave it alone and eat it later that night or on the morning... works great for most meats, ribs, coon, squirrel(although I like Honey BBQ on squirrel better)

I have never found a menudo I cared for. Just don't like the consistency. I used to love son-of-a-"gun" stew, made with same ingredients, but I think they browned the meat before stewing it.

Heard that, tried it when I was younger for that purpose, just never found one... now, chorizo/egg/cheese burrito, there's a cure....

I have had bobcat, and it is not bad. The main thing is getting over the fact that it is a cat.

Hunting Texas - Randall & Lora were good folks and I was able to get a recipe for bobcat from them but had one from a great uncle of mine who really could cook them up and they tasted like domestic rabbit to me and were dang good.
I'll eat a bobcat before any other predator or furbearer, maybe except for beaver adn nutria and they sure make some great chili and cubed meat with noodles or rice, smothered with gravy is dang right good also. Armadillo would be next even though they are a non-game animal. Yes they are, met them once doing a shotgun purchase. Loved the cat on the leash LOL. CH is one of those guys that you could imagine 100 years ago more than you could today. Their story about him hunting on their honeymoon was hilarious, processing the game in the bathtub at the motel LOL.

This thread has east texas all over it. Suprised a coon recipe hasnt shown up yet! Did yall see "The Wild Within" last Sunday. The guy was preparing a feast for a bunch of San Francisco folks using just what he hunted/fished/gathered inside the city limits. The main course was fresh roadkill raccoon. He had them try it before he told them what it was. The look on those Berkinstock wearin folks after he told them what it was, priceless!

Man, now you're talking some good eats but the ingredients are a bit hard to come by. My mom used to make son-of-a-gun for large gatherings when she owned the bar close to Orient. The last big blowout we had out there she made about 10 gallons worth and we ran out before the night was over. There aren't many folks who even know what it is.

my cousin has a cook book from the north american hunting club that had recipes for everything from armadillo to opossum a couple i would not try but surprised that there was a mass publication of it. like you said meat is meat try it out an let us know. alot of people told me that auodad was dirt meat an not good to eat but one guy said it was fine, i went out an tried it an omg its so delicious ! cut the steaks right an it fell apart in your mouth ! so if you find a good recipe let me know after all we are carnivores
