Oh yea, that is the way to go, especially with any of the less desirable ducks. We like the smoked sausage too. Both jap/cheese and regular hot. I throw in with the duck/geese a little wild hog backstrap, and the one/twosies of any other small game I take during season. The entire family likes it and it is one way my entire extended family will eat waterfowl. Everyone so far says the duck/small game sausage tastes better than the venison sausage we also have made at Kubys.

Yep, Kuby's will make sausage out of any kind of game meat you bring them. The only one we have had made and do not like is the Bratwurst. When your just taking in meat and not paying for processing the price is reasonable. There is no limit on how little you bring in. You can take them only 5 lbs of duck breasts if you want. I debone mine first because I mix in small quantities of other game meat, but I think they will do that for you at no added cost, not sure.

I took them 30 lbs of duck last season and had it made into jap/cheese sausage.

Its almost impossible to tell the difference between it and the deer jap/cheese.

Took a deer to Syracuse this year just to switch it up.

Love the name change, Shorebird.

He must have had them kill the deer, field dress, butcher, and make sausage.

Make that 7 deer.

I think Barney might be exagerating a little, but he is right their prices are high.

So are Syracuse's.

The best deal on processing I've got recently was from the Deer Shop in Abilene. They are fair.
