I have made many posts on here about smoking baby back ribs. I normally wrap them to make them tender, but today I was in no hurry, serving them for tomorrow. So I did not wrap them, strait on the rack, slowed cooked all day (put them on 12:00 and just took them off), man they are awesome!! Pic after a few hours on the smoker...

Look mighty good! What temperature do you cook them and how long for fall off the bone tender?

I don't wrap mine either.
I smoked a turkey for 6 hours this afternoon, then wrapped to finish in the oven. I hope it's good.

I smoked a turkey for 6 hours this afternoon, then wrapped to finish in the oven. I hope it's good. I have one on the smoker as we speak. Gonna take it off about 11:15 pm and put it in the oven (wrapped) til about 6 am at about 190 degrees. It's always turned out moist and delicious.

Look mighty good! What temperature do you cook them and how long for fall off the bone tender? Put them on at 12, took them off 7:45. Temperature 200 to 250 the whole time. Pulled the membrane off last night, soaked them in water for a few hours (should have done brine), refrigerated all night and spiced them up about 7:00 this morning (should have put the spice on last night) and refrigerated till cook time. 12:00, I put them on, base first few hours with olive oil to keep moist. Then started basing w KC master piece. Normally when I wrap them, when I see them starting to pull up on the bone, I know they are getting tender. Cook much longer than that and they are falling off the bone, and that is too tender IMO. I like them to be tender, but not so much that you cannot pick them up. If you pic them up and they fall apart, that is too much. But I’m sold now on the “no wrap” style, but you need some time to do it right.

I prefer mine unwrapped. I tried both ways and just just seem to like it a lot more.

Looks great!! I preferred spare ribs to baby back ribs for years, because they had more meat. Not anymore. They leave more loin meat on the ribs cause, they get more for the ribs than they get for the bonless pork loin.

what kind of smoker are you using? I am looking for my first soon and am overwhelmed I know I don't want a cheapie. Offset barrel, Weber kettle, something else??? help!

Bgirdler, look into building a UDS, they are much more efficient than an offset and require much less tending to. Google Ugly drum smoker you can find all kinds of plans etc. I love mine.

what kind of smoker are you using? Mine is a SmokeMaster. Below is what I got: They went out of business, and Big Hat BBQ took over http://www.bighatbbq.com/See model BH 2040, that is what I have. These are high quality smokers.

I wrap or don't wrap based on temperature, what else is cooking, etc. If I am in a hurry, I can do them faster and about as good wrapped after about an hour of smoke.
