Well I got our first deer ever back from the Prosseser last fri ( a week from yesterday) and had some jerky made up. We ate a few pieces threw the rest up in the cupboard. Went to get some a few minutes ago and it had mold!!!

Not sure but surley this shouldn't of happened right???

Should I call the guy and tell him??


What should I do???

Sounds like there is too much moisture left in the jerky. I don't think it was done right and most definitely would call the processor to work things out. Properly done jerky doesn't mold.

A friend introduced me to Hi Mountain Jerky Mix. Hands down the best jerky I ever had and I did it myself. A package cost a little less than 8 bucks and can make 20 lbs of jerky. Picked mine up at Sportsmans Warehouse, probably can get it at Bass Pro/Cabelas as well.

It might not be mold but the salt in the cure. Post us some pics. Rinse it off and put in a paper-bag and place in fridge for a few day to dry out. Then go buy a vac packer and it will keep a long time.



They make ammo specifically for hunting for a reason! nidea

How are you storing it? If stored in ziplocks it can mold.

x2 might not be mold if it's a kind of white powder like stuff. Pretty scientific huh.

Don't let her see it. Sausage and jerky will get a thin white looking mold on it if it is to humid. We have always just wiped it off with vinegar and it will be fine when the humidity goes back down. A lot of people must have spent way too much time on the pavement around here.

refrigerator storage?
freezer storage?

I use a ziplock and keep in the freezer. Been doing it for many years with no issue.

Wrap it with dry paper towel and put it in the crisper in refrigerator. Never molds if you do it that way.

If you are going to store in a ziploc, leave the bag open. The plastic bag will cause it to sweat which will cause the mold. Just store it in a way that air can circulate around it and you will be ok.
