ONE BIG QUESTION IS HOW ARE YOU GANNA COOK IT???
FOR THE GRILL I MARINATE MINE IN FAT FREE ITALIAN DRESSING FOR THE FLAVOR. OTHER TIMES I WRAP IT IN FOIL WITH SALT, PEPPER, BUTTER, GARLIC AND ONION. OR WRAP IT IN FOIL WITH BBQ SAUCE.

Or if cooking inside, saute onions peppers and garlic, add meat,keep moist with worchestershire as it cooks.... serve with cheese (and sour cream and/or guacamole) in a flour tortilla...

yeah i guess i should have been more specific..i am going to FRY some back strap..i have heard people say , soak it in salt water , soak it in milk , soak it in buttermilk , soak it in beer....give me some ideas..i have always just seasoned it tumbled in flour and pan fried it...just wondering what the hunting "experts", like to do when they fry some deer meat..

If you're gonna fry it, sounds like you know the way. I've never soaked what was to be fried....but for lands sakes, don't waste the beer.

I take mine, cut it up into frying pieces then tenderize it with a meat hammer. Then I put it in a bowl of milk mixed with about a 1/4 cup of jalapeno juice and let it set for about 30 minutes. Then roll it in your seasoning and fry it. Then I use the milk mixture to make gravy with.

You might also try soaking in milk and red devil (or louisiana hot sauce). I do this with fish to but like my fried backstrap this way also.

If you grill it marinate with Soy Vei terraki and grill it very rare. The Soy Vei to get is with the blue label. Best meat I have ever had. Spinach salad withfeta, black olives, red onion, and tomatos topped with Girrards originial itlaian dressing= money!!!

what is the benefit of soaking a meat in milk??does it take the gaminess out or tenderize??

What you should do is cut it into small thin peices and take some jalapenos and take the guts out of them and put some cream cheese in the jalapenos and then the backstrap then wrap it up with some bacon and throw it on the grill. Or you could chicken fry it. So many options so little time. Cap any luck with roscoe.

i cut mine into 1/2 inch pieces. hammer it out flat with a tenderizin hammer. be careful not to hammer through it. i use 1 egg in enough milk to cover the meat. let it soak for about 10-20 minutes. it gets all the blood out of the meat and takes the gameiness out of it. then dip it into some flour with all my special seasonings in the flour, and into the hot corn oil. tastes EXCELENT! ask anyone that has eatin it.

we are frying it the conventional way right now and i'm ready to eat.....dc nope...no luck finding a home for the roscoe man just yet..i was out back working today and he was asking about you...thanks for asking though..he is still available

we have always just grilled ours but then i have also just quick-hot seared it in a frying pan w/ butter & just alil season salt...not too much to cover up the meat taste

On elk steaks i just use some all season salt but not too much ,pound them a little and put them in a fry pan sprayed with a little butter.Only thing i can say is hmm hmm good.

soak it? marinade it? why???? dont kill the taste.... if you dont like the taste of venison dont kill it. Go buy ya some beef.
I like mine fried in a pan with a small amount of olive oil after spinkling on a small amount of salt and pepper. I like to also fry up some taters, onions and jalapenas to eat with it. Damn now my mouth is watering.

there is nothing wrong with harvesting deer even if you dont like the taste of it.

That wasn't meant like that sorry...was kinda tounge in cheek.
I used to love killing ducks but never could acquire a taste for them no matter what I did they came out tasteing like moss but I still liked shooting them.

well my verdict is out..we deep fried it after having soaked it in milk...no bueno...the milk did absolutely nothing and the deep frier left it too crusty..here's what i came up with.. season salt , garlic powder , black pepper...sit at room temp for one beer..drain off juice..drink one more beer..flour each side one time heavily with no milk..fry in cast iron skillet with about one half inch of crisco for about 2-3 minutes each side max...place fried stuff in paper towel inside of a brown paper sack and keep warm...open another beer for your friend of course and sit down and eat with ketchup....as usual my original method was best...ok let's do it again tomorrow night

oh dont deep fry it....just fry it in a skillet in 1/4 inch of corn oil.

I like to take my backstraps whole & season them with Fiesta Brand Fajita seasoning, apply lots of it the night before you wanna cook it, put in fridge to marinate overnight, build a mesquite fire in the pit & put meat on to smoke for about 1-2 hours, then put in roasting pan or heavy foil wrapped loosely (make a tent), finish cooking until it is the way ya like it , it will be so juicy & tender, you can just pinch a bite off!!! Panfried deer steak, just do it like you would a beef or pork steak & enjoy what the Lord Almighty gave us to sustain life!

Im big on soaking it in buttermilk and then battering it in flower and then pan frying it. Thats just how my mom cooked it when I was a kid and I have stuck with it.
