Brined my birds, marinated in Italian dressing, then seasoned. Added a chunk of cream cheese, a Hatch green chile, and wrapped in bacon. Cooked them on a hot mesquite fire. Mmmmmm....

Looks good, but you should bone them out first, so you can just pop the whole thing in your mouth.

Have done that, but we mixed green chili's, cream cheese and bacon before stuffing
