all i do is rub the steaks in extra virgin olive oil. season with sea salt, garlic powder, and fresh cracked black pepper.let marinade in fridge for about three hours. before cooking take steaks out of fridge and let them get to room temperature. cook over a hot fire, turning only once. i cook mine to medium-rare. take off grill and let rest at least 5 minutes before cutting or eating.

Good steak does not need a marinade. Salt and pepper.

This is true, but not every steak, is a good steak.

For the leather cuts I normally do a blend of the savory: worchester, soy and liquid smoke.

Try this; rub down with French's Mustard.. Yea I said mustard.. then a medium coat of the Montreal corse steak seasoning.
Let sit for a min of 3-4 hours wrapped up @ room temp.
Over a very hot fire (propane grills need not apply) Real oak lump or cook down some Mesquite to coals. Throw 1-1/2 thik Rib-eys on for 2.5 min on one side 2-3 on the other.
Once steaks hit the grill place a few stripes of Parkay squeze butter every min or so...
rest for 5 min.. DO NOT PUNCTURE "SEAL" ON STEAK with forks ect untill ready to eat!!!
Have won local steak contest with this, & ruined some close friends' thoughts of what a good steak is...
thought I would share...

melted stick butter, lime juice (fresh squeezed the better) and whatever season you like to taste (garlic salt, tobasco or tony's, ect..) gallon zip bag in the fridge for at least 30 minutes. butter will harden up again & when you grill, it will melt & cook in.

I have a neighbor that will defile a good ribeye by marinating...sad.

When asked at restaurants if I need steak sauce, I always answer "I hope not".

For poor man's cuts (no flames;I eat them too) try orange juice or even better...pineapple juice with crushed garlic. It'll blow your mind. Good for chicken as well.

Amen Omaney! Why buy an expensive cut and drown it with wet and dry spices, I don't get it. Might as well buy chicken.

Add a little tequila to your poor man cut's recipe, it makes it even better up

Not true at all!! My wife is the Catering Director at the Reata Downtown, you think they don't use top quality meats? Yea right!! They still marinate there steaks.

Good steaks don't need tasting sauce i.e A1 etc.

Here's a good one if you're using skirt steak to make fajitas

1/4 cup lime juice
1/4 cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon chopped fresh oregano
1/2 teaspoon ground black pepper

I think the only reason you should marinate a steak is if it's a tough cut to start with. Marinades should always have some sort of vinegar or acid to really tenderize the meat, not just make it taste different. If it's a good steak....salt, pepper, and maybe some garlic salt cheers

I got nothing, salt and pepper at most. Garlic salt if you just have to. Beyond that, I agree with the purists. A good pc of meat just needs a good Mesquite flame and a knife & fork (optional for a redneck).
