On my smoker, using hickory wood keeping the temp of the smoker between 225 & 250 degrees. Took the brisket to 165 degrees (internal temp of the meat) in the smoker and then double foiled it and put in the oven(250degrees) until it reached 195 degrees (internal temp of the meat). Refoil - double, wrap in heavy towels or blanket, place in cooler for a few hours and then slice! Check out my July 4th Butt thread...I prefer the pork over the beef. CB
