OK, those of you who have booked hunts with Randall and me may be interested to know that I have planned the menus, and I will be serving the following during the hunts. If you are still interested in booking, and have not done so, we still have a few openings, contact Randall / CHC :


Breakfast, served at 6am, will consist of 2 meats: bacon, jackrabbit sausage, seasoned medallions of jackrabbit, deer saugage, javelina sausage (these will be homemade by me) Jimmy Dean sausage. Eggs, Potatoes, cereal, and some sort of bread; homemade tortillas, pancakes, waffles, french bread, cinnamon rolls, muffins. Coffee, tea, OJ, milk

Lunch will be different each day. I can pack lunches, or you can come back to the ranch house. I always have a pot of stew going. This year, Randall and I are smoking 7 pig necks, and that will be the base of the stew. It gets better as the hunt goes on!

Supper will be served around 7pm. I will be roasting a wild pig for each group of hunters. I also plan on serving stuffed bell peppers and tomatoes, and sloppy joes made with the front shoulders of jackrabbit. Also planned are meals made with locally-raised Permian Basin Shrimp (yes they raise shrimp in West Texas), javelina, deer, fried catfish, and lamb dishes. Now obviously you won't have all of that on each hunt but it gives you an idea.

I serve 2 veggies with supper, also a green salad, homemade bread, and desert. I always have ice cream in the freezer.

Saginaw Hunter's son, Steven, will be having his 8th birthday so the night of March 10 we will have Chocolate cake.

We are really hoping that we could get you and Linda and maybe Hwy_man over for supper one night. I know that is a long way to go for a meal, but it will be Lora's cooking.

I get hungry just reading that list. That all sounds great I can already see eating too much won't be hard to do
