I'd like to make some, but want to use some white bass we've got on hand. Would this work, or is it only edible when made with snapper?

Who's got a favorite recipe?

6 Roma tomatoes

1 pound of small peeled and devained shrimp
2 limes
1 container clamato tomato juice, not Bloodymix
1 one gallon tupperware container

Finely Chop Tomoato, onion, cilantro, jalepenos (no seeds) and combine in a bowl with about 2 tbls of Sea salt and Black pepper. Squeeze one lime over mixture and mix till seasoned.

Empty black beans and corn into colander and rinse thuroughly. Place combo into tupperware container.

In a small pot boil about 5 cups of water seasoned with salt. When water is at a roaring boil, add shrimp in. Boil for 3 minutes, then transfer shrimp to a colander to drain. Then move shrimp from colander to a bowl with ice, to chill for 10 minutes. Make sure to burry shrimp in ice.

Add all ingredients into tupperware container. Add 1-2 more tbls of salt. Add 1-2 more tbls of Black pepper. Close container and shake vigorously until combo is well mixed. Re-open and fill container 2/3 of the way with clamato juice and squeeze in second lime.

Refridgerate overnight. Place container in coldest spot of fridge. Enjoy the next day with saltine crackers or white corn chips. You might have to add salt and pepper to your taste. This is the most refreshing dip I've made thus far. Expect to make many friends.

I use trout. (specks) White bass should do. I make sure the acid in the lime juice cooks mine all the way through, before I drain, and add the salsa. It'll do it overnight on the countertop. I've seen it take up to two days in the frig.

I start with bottled lime juice,salt and onions. Vinigar will speed the cooking process. You can tell when it's done. The fish will take on the color, and texture of boiled shrimp.

They make it from conch on the boats at Caymen. They eat it right away. I love conch.

Robert's salsa recipe looks delicious.

I HAVE MADE CEVICHE WITH SAND BASS AND STRIPER. TRY TO REMOVE THE RED LINE AND ONLY USE THE WHITE MEAT. YUMMY!!!!!!!!!!! cheers

I add some a little balsamic vinegar to it, it helps with the flavor.

If you can stand it, one habanero pepper in the mix really hits the spot. I use shrimp.

Okay, the oatmeal didn't cut it, now I'm hungry!

I've always enjoyed my ceviche with Mahi-Mahi. Don't eat it often enough though.

Just FYI, when I wrote that recipe, I kinda "winged it" on the salt. Reading it now, it clearly has to much. Just salt to taste.

I've used everything from sand bass to mahi. They are all tasty. Use a firm fish.
