this is the 1st time I cooked wild turkey. I marinated it in a little olive oil vineagrette, soy sauce, worch, whiskey, and some peach stock(?). (I took some peaches I had that were getting a little soft, cut them up and threw them in a pot with enough water to cover. added salt, pepper, and sugar. brought to a boil, turned down heat and reduced liquid. let cool and strained) I then took breast out and seasoned them with a seasoning I came up with (garlic powder, onion powder, salt, pepper, chipotle chile powder, dehydrated apple powder i made, and toasted pecan powder i made) I then seared it on the grill and placed on top rack at 250. At the end I basted it in some homeade bbq sauce. Here are the results. (Came out a little dry but not used to cooking wild turkey)

Looks good but sounds like a little overkill on the marinating/seasoning.

I am probably gonna cut the other one into strips and fry it. What would you do with a leg? I only have one since the other one was messed up. Not a whole lot of meat but I wanna try something with it.

The last turkey I killed this year we cooked half of the breast in camp one evening. I cut it in strips, marinated in Worchester sauce for 4 hours, removed it from the marinade, seasoned both sides well with McCormic Monteral Chicken Seasoning and fried in a castiron skillet. It was really good.

We breast them out and then butterfly the breast.
Dust the breast with your favorite meat tenderizer and place it between folded wax paper. Use a hand held meat tenderize and beat it into 1/4" thick cutlets.
Rub it down with Tabasco Green Pepper sauce and then dredge in flour seasoned with salt and pepper.
Fry in 350 degree oil until done...a dark golden brown.

I just trim the breast out of wild turkeys. Quick and easy. Nothing else worth keeping IMHO.
As to cooking them, I cut them into little nuggets, wrap them with bacon and sprinkle coarse lemmon pepper on them..throw them on the grill. Awesome!

It is actually the leg and thigh. I might just take it and use it for some stock or something. Not that much meat on it.
