Got a problem I could use some advice on. My daughter shot a Fallow this weekend and we brought the meat home, deboned, in ziplock baggies. Threw it in my walk-in cooler Sunday afternoon. Checked it Monday, and all was well. Didn't check it last night. Went to finish cleaning and packaging it tonite and the cooler was 62 degrees, so was the meat (HVAC guy tells me coil leak). So I don't know how long it stayed that way, but it could have been all day. It smells fine, just like venison, and is not slimy. But I know the "danger" zone it 45-105 degrees. Anyone have any thoughts? I would truly hate to throw away 65 lbs of meat.

If it still smells good Id eat it. Maby just a little bit the first time but I would think its still good.

I would think it is okay. I know some might think otherwise but 62 ain't that warm as long as it ain't at that temp for a long time. It probably wasn't at that temp for a too time. If it smells fine and looks good it should be okay. Just take a small piece and cook it and see.

SMELL SMELL SMELL..... If the smell has a sweet or rancid hint chunk it but if not cook a sample and wait 24 hrs for the bombs to hit.

i looked this up when muy brother and i decided to butcher a deer from start to finish for the first time. according to our source it said 36 hours at 55 degrees is more than ok. I'm sure yours is fine. as people said on here, if it doesn't smell bad, eat it.
Beer of the world beware. I'll kill an 18 pack just to watch it die.

Heck make it into jerky... it's done at low heat, kick it up to 150 and start drying.
