If you want the very best sausage in the State of Texas, this is the processor to use. They do not take whole deer. They only accept deer that are quartered up. The Wenzel family has been making sausage longer than I can remember. They are 2 blocks off the square in Hamilton. Here is their website for more information. My 3 favorites are the dried Yeagerwurst snack sticks and the Lonestar Bratwurst. If you try their Lonestar Brats, you will probably never eat anything other than theirs. Thats how good they are. You absolutely have to get some of the bison/bacon burgers. They are absolutely the best. Everything I have ever eaten from there is excellent.
