I am going on my first hog hunt this morning. I live in central AR and there is a small but growing population of hogs that hang out near a local power plant. My brother and a buddy have killed 5 in the last week and a half or so, 40-250 lbs. Going to have some dogs today though. I will post pics if we have any luck.

Only got a small one Saturday, about 40 lbs. Different guys came Sunday. They brought horses and about 10 dogs. Got 5 of the little 40 pounders. The bigger ones slipped by each day. A boar with 3" or so cutters threw the dogs off on the pigletts Saturday. He was more than the guys 2 dogs would have been able to handle I believe.

Do you make sausage out of the small ones, or do you quarter them out for hams and chops?

I just split em down the middle and put em in the smoker. Or just do em whole, either way they are great. I have done them both ways!

Do you cook the quarter whole, if you dont smoke it?

Do you slow cook it?(Bake?) (what temp, how long?)

Any recipes that you like?
