Do rams make good sausage? Rams like Barbado or Texas Doll.
Might be going on a ram hunt soon. And wondering what the best way to have it processed is.

Tamales. . . seriously, it's pretty low quality meat. If you like mutton, you'll be ok. Otherwise spice the heck out of it.

We used to donate ours to a mission along the border, and they actually requested we quit bringing in after a while. . .

Our farm hands used to like them when we had them out at our place. Once they got some axis and some of the other stuff they pretty much turned down the free ram meat the next time we offered it to them.

A young goat is pretty good. Like maybe 9 months old or so.

One word: NASTY!!!
My son shot a ram several years ago. The meat was so greasy and tough (no matter how it was cooked!). Even our dog turned up his nose at it.
I make it a habit to eat whatever I harvest. I can promise you ram will not be on the menu at our house.

Tried barbado once and thought i would never get the taste out of my mouth. It was boiled , then cooked on the grill. Not something i would want to try again.

I usualy make jerky with my ram meat. Taste great but in all honesty i think you could make jerky out of anything and it will taste fine

i tried to give my mouflon away...not even the mexican ranch hand wanted it, typically they can make anything taste good.

I ended up donating him to the coyotes and buzzards

I have had breakfast sausage and fresh BBQ links made from a Catalina Goat and Texas Dall that I recently shot. I am picking up the Ram from the processor tomorrow so I will let you know but the goat was fantastic. The butcher had done a few of these and added extra garlic to the link sausage and extra sage to the breakfast sausage. I have made breakfast tacos and BBQ sausage for my church with both and they have turned out well. That as an old mature goat, BTW.

I tried to do ram jerky one time with a hunter's ram who did not want the meat and I can still taste it! I would suggest the sausage grinder and plenty of spices. My rule is personally not to kill what I do not eat but my processor in Killeen (Cosper's Meat Market) knows how to do one! I think they could make good sausage from shoe leather! LOL.

black buck is okay....not the greatest but not bad...imo alot better than fallow.

I just want one for the wall and will eat it because I shot it. I may give some or much of it away but I would feel obligated to at least eat some and I my diet does not allow the sausage.

its not bad enough to make in to just sausage.


properly seasoned (not overseasond) the backstraps and tenderloins are quite good.

i turned the rest of mine into hamburger and it was okay, pretty dry even with beef tallow added

Hey Passthru! I made BB into sausage one time and it was great. It is one of the most mild tasting meats though and I like it. Not a lot of it but if you prepare it right on the grill as far as steaks or chops go, you will not be disappointed!
