Just bone out the muscles and use them as you would beef. Make a pot roast, and use the leftovers for beef dishes, for example, but not limited to Chinese bell pepper steak, stragnoff, and beef and broccoli. You can google any of them.

The biggest problem is not drying out the meat, because of the low fat content. I suggest a pot roast, scroll down the posts within this portion of the forum for a recipe I posted.
