Try Ted's just outside Brownwood. N on 183 in a little community called Owen. Craig (the owner) is a really nice guy. He likes to show the new folks around and how everything is done. Great guy. Great attitude. And, they do pigs too. A lot of 'em won't touch a pig. Tell him Big Tony sent ya.

There's a couple on 281 just south of Hamilton. The one on the west side closer to town, Whaley's, is better. Also does taxidermy. Seems you ought to go right through there on the way home.
Not skinning them is a mistake, bottom line.

I hunt near Brady and live in Colleyville, the way I go up 377 it seems like I pass several. I would keep driving right past Cox's in Commanche though. I tried them for the first time last year, I found all sorts of nasty stuff in my ground, wound up throwing it all way. Peeks Processing in Brownwood SWEARS on there website you get YOUR deer back and they do them one at a time. I might try them this year. Or bring it back to town for Kubys,Syracuses, or Joshua. Some guys said some good things about Steves Meat Market in Brady.

I made the mistake of using Cox's once. And, you're right on the quality of the ground. I don't know whose deer I got or who got mine. I think it's just one big community chest!

Why not Steve's in Brady? Seems like a good guy, and I had 3 deer processed by him this year. He wraps steaks, backstrap, etc. in butcher paper (not my favorite, I prefer plastic wrap as it's easier to thaw), and ground is in plastic tubes.
The meat I've consumed seems to be fine, no gamey flavor at all. His summer sausage is amazing, but pricey ($4.50/lb). Also, I took in 2 hind quarters from a doe to get it ground up, and he only charged me $24 all in. Not bad for that.
The entire deer I took in (1 buck, 1 doe) was obviously higher, plus I had some sausage made. Here is his price list for this year (2009-2010):
Basic Processing: $75 (process deer, tenderized steaks, chili meat, ground) Breakfast sausage: $2.95/lb (10 lb min) Smoked link sausage: $4.00/lb (10 lb min) Jal & Cheese Summer sausage: $4.50/lb (10 lb min) Jerkey: $8.00/lb (5 lb min)

I used Joshua (between Burleson and Cleburn) this year... You could make it on your way back from Brady and it's not too far to go pick up. I had just the basics as I'll make my own sausage. Happy with it.

How much did he charge? Last year they went up to $80 and I decided against it. Although he is a good guy.

I was thinking it was 75 but it might have been 80... would have to pull my credit card statement to see. Place had a lot of good recomendations too... and the meat was vacuum sealed in plastic and frozen solid. From what I saw, he ran a clean place and it smelled good to boot. Had a couple of the steaks last night and they were tender.

It's out of your way, but I would make the drive down to Hudson's in Austin.
I've treid many many places, and nobody can come close to their product.

We've been taking our stuff here for several years. Good service, good product, good people. http://abilenedeershop.com/Of course for us it helps that it's right on the way home from the lease.
