WE plan on makeing about 200 lbs of sausage this year and we are thinking about using oak this year instead of mesquite. Anyone use oak wood to smoke their sausage?

We made 24 sticks of summer sausage last weekend, and all we used was oak
turned out well smoked and tasted great
cooked about 4 1/2 - 5 hrs @ 175*
next batch will have cheese and jalopeno's in it

Everybody knows that if you're gonna use oak to smoke summer sausage, you might as well have used cedar!!! Pecan is the only way to go.

Used pecan once. Will never make that mistake again. Totally ruined the meat. I've used oak on strait pork sausage, but not on deer/beef/pork mix.

we do our own and it always turns out great. We mix pecan and hickory. Man is making my lips water now. If you can get your hands on some hickory i recomend giving it a try. Make sure its seasoned well though. Green hickory as with any woods will leave a bad taste in your mouth.

Oak is good, has a mild taste. Hickory is best, imo. I often use oak to build a bed of coals, then use the hickory for flavor.

HICKORY IS THE ONLY WOOD THAT SHOULD BE USED. ALL OTHERS SHOULD BE OUTLAWED. HA!

I've made about 100 pounds lately and have used hickory and pecan. To me...th hickory gives a stronger smoked flavor while the pecan is milder and perhaps a bit sweeter.

When I use Oak I like to put a little hichory or mesquite with it. Oak is kinda strong for my taste...Apple wood is good also.
