Just got another hog back from Steve Blankenship's PO' Boys Outback in Merit. Awesome job, simply awesome. 110 pounds of meat, backstrap/loins tenderized, pork chops, ground the rest into half breakfast sausage, half ground pork.

Ground pork....in soups, stews, casseroles, chicken fried, Italian stuff, mexican dishes....use it just like beef. Better, leaner, cheaper...

It was a BIG boar too. No gamey taste at all. Very little meat loss. I have some of his summer sausage and hotlinks and pepper sticks/slim jims too, very good.

Diamond P in Clarendon is the nearest I know of, but I think there is one in/near Wellington at a ranch. I haven't been there but I've heard that.

Dziuk's in Castroville and Jackowski's (Uvalde Meat Processing) in Uvalde. Never taken a deer to Penshorn's, but have had stuff from there and it was excellent. Also, Woodbury's in Ingram has awesome jalepeno cheese sausage and great dry sausage.

I will be going to Fischer's in Muenster this year.

I will not be going back to Hamilton's in Weatherford, though they do have pretty good summer sausage.

Last year, my buddy and I each dropped off a doe on the same day at Hamilton's. 4 days later, his was ready for pick up. Mine wasn't. No biggie. About a week after that, my buddy dropped off a buck for processing. Mine doe still was not ready. Called them and they gave me the run around and couldn't find my ticket. Called me back later and said that they found the ticket and would have ready asap. A few days later, my buddy picked his buck up from processing. I called again and questioned as to the whereabouts of my meat. They said, "come by tomorrow and it will be ready". Picked it up... a VERY small box. Took the box of meat by my buddy's house to see if he could compare it to the amount of meat he recieved from his doe. Said it was about half of what he recieved.

They lost my meat and then scraped together a small box of meat from other people's deer.

I realize that things happen. If they had just been honest and made it right, I would definately be going back. They weren't and I won't.

didnt read all the way through the post...but HALLS in COLEMAN is excellent and have great prices...turn around during the season is about 7-10 days.

J&S processing in Fairfiled off of 1-45 down FM 833 about 3miles, does a great job on deer and hogs for a great price and they do some good lookin european mounts for only $70

I hear Tallent in Riverside does good work, have bought some retail, but never had mine processed there. I started making my own link & pan sausage a few years back, I know what does and doesn't go into it!
