Brown 1.5-2 lbs burger with a chopped onion and a few jalapenos. Mix two cans of rotel, and one can each of great northern beans (drained), one can black beans (drained and rinsed), kidney beans (drained), and chili beans. Put in a 29 oz. can of tomato sauce. Throw in some chopped garlic. Dump in a bunch of chili powder, some cumin, some cayenne pepper, and some paprika for color. Salt and pepper to taste. Stir all of this up real well. Add the burger/onion/jalapeno mixture and stir it up real well again. Cook in a crock pot on high for a couple of hours then turn it down to low and let it simmer all day.
There's as many ways to make chili as there are folks on here. All are probably great.

I will have a full detailed homemade chili recipe up soon, with pics. Of course, it isn't 100% of my 3 time winning recipe, but its ALLLLLLLMOST as good.

Always add a can or refried beans toward the end, no matter what recipw you use. It'll thicken it up without changing the flavor.

I don't know about the communists, but damnyankees fo' sho'! Texans = No beans in Chilli Kind of like tea...anyplace in Texas that doesn't have sweet tea aught to be fined heavily! Screw what my dentists says he can just keep filling my cavities, gimme my sweet tea damnit! Earl

Ingredients:
- 1 lb cubed venison (not ground) - 2-3 cloves of finely chopped garlic - 1 white onion - 3 cans of stewed tomatoes - 1 can Rotel - 5 tablespoons chili powder - salt - pepper - cumin - paprika - cayenne pepper - 1/2-1 bottle Shiner Bock beer
I take approximately 1 pound of raw venison, cube it into really small chunks. Brown the meat in some olive oil, with finely chopped garlic and chopped onion. Once meat is browned, add 3 cans of stewed tomatoes, 1 can of Rotel, 5 tablespoons of chili powder, then add salt, pepper, cumin, paprika, and cayenne pepper to taste. Add 1/2 - 1 bottle of Shiner Bock beer, then simmer for an hour or so.
If you want it thinner, add a bit of water. If you need to thicken, simmer a little longer, or add some tomato paste.
If you like beans in your chili, add a can of drained pinto beans while it's simmering.

Glad you liked it cbump! You don't need too much cumin, just a few shakes. Remember, you can always add more but you can never take it away once it's added.
We made a fresh pot last night. Dang good! Used some shoulder meat from a doe I killed a few weekends ago. I had forgotten how much better chili is with venison vs. beef. It's not even close!

I made double your recipe so I put in 10 tablespoons of chili powder and about 1 tablespoon of the others. Maybe a little more. Probably way too much cumin if you just use a couple shakes. lol

Most chile recipes are about the same.
I cook the meat much longer than most of you are telling about in your recipes, especially when using cubed meat. The meat will thicken the the pot. I stew the meat for around a half a day, then add the other stuff, for about 45 minutes.

I have been waiting for your detailed chili recipe!!!! It's gotten cold and would be a great time for me to cook some up. Chili, beer and football....only thing better is sitting at the campfire at deer camp!
