Fajitas also work very well with ham sections. Just don't overcook them! Medium rare only.

I take a tenderloin and get out my knife sharpening steel. take the steel and shove it thru the middle longways to create a cavity and then stuff the cavity with what ever you want . I usually use wild hog sausage or dirty rice. Tie the ends with string and season to taste before you grill low and slow. Sometimes I wrap it with maple bacon and sprinkle a bit of brown sugar on it. When done , cut in medallions and you come out with a duoghnut shaped cut filled with goodness.
