I rub mine down with a mix of brown sugar, red pepper, garlic powder, salt, pepper and season all, then wrap in foil place away from direct heat and cook for about 5 to six hours anywere from 250 to 325, the temp I cook at usualy depends on how fatty the ribs are more fat more fire.
