I think you pretty much got it. The water tub helps defect the heat, and sometimes that is needed, I try to avoid the water, just kinda messy, I side fire box is better. But I have a gas grill, same kinda situation you got, but I turn the heat off on one side, and that is the side I put my ribs, so the heat is indirect that way.
