Pork Ribs

My last rack I thought turned out great but just wondering how everyone else cooks theirs. Here is how I did mine.

Charcoal Grill to 275-300
1. Cake pan 1/2 filled with water and metal rib rack over the top.
2. Placed ribs on rack seasoned and covered with tin foil. I cooked the ribs covered for 3hours 30 min.
3. Uncovered and placed on grill rack, and added soaked Hickory chips to the charcoal. I did this for 1 hour. The temp was still around 200.
4. Sauced them up with some Stubbs spicy for 45 mins. Then pulled them off.

I thought they turned out pretty good just wondering if I missed a step.
