If you don't mind quartering and de-boneing your kill, Kent Wenzel and Wenzel's Lone Star Meat company in Hamilton are hard to beat. I consider myself an expert when it comes to meat processing and marketing and I really like what I see there at Kent's place. Cleanliness is the first thing you will notice about his place, then there is the Smoke dried Jagerwurst (Dried German Sausage).
