Good rule in customer service is "under promise and over deliver". Folks that have been in some sort of customer service roll before tend to expect more out of those providing a service for them. I'm one of those. I know Joe Blow off of the street doesn't hold people to the same standards as I do. If I'm shopping at a "big box" discount place, I know the quality of employees they hire, and understand that I'm not going to get the service I expect. If I want service, most of the time, it's better to go to a business that has a reputation for the same.
I'm not pointing fingers at your taxidermist, I wasn't there and didn't make the agreement. The first thing I took to the taxidermist seemed to take forever! I don't know that he promised me a date. After I understood how that business works, I don't even ask. I usually pay mine out, and I don't think he even starts to work on it until its paid for, which I understand. A couple of times I have paid up front and I always just tell him to call when it's ready. I know the quality of his work and know it will be worth the wait.

just call, the main man is not there had to talk to deputy dog.... he says looks like he has a little painting to do, so i say you think it will be done today b/c I'm going out of town...he say oh so is the main man.... so deupty dog is to have main man give me a call... sounds like it will be next week...no good!

He told me three weeks on Stacey's mount yesterday.  It's Okay though. Want him to take his time. He is an excellent taxi and am just glad it is there not somewhere else!

I am in no way defending your taxi I don't have a clue who it is. I have several friends in that business. Most of them are really good about telling you when it will be done and sticking to it. One of them stays 2 years behind. There is no reason to not communicate with you as to what is really going on.
BUT
I know one of them this year was put several months behind because his hides were several weeks delayed from the tannery he uses. In years past the company turned them quickly this year for some reason they took forever and even ruined one hide. Not his fault but definitely his problem.
I was at the other guys shop the other day and he had over 20 animals that have been dropped off, with deposit given and now that they are done he either can't get hold of the people or they won't come finish paying him. So he's sitting on several thousand dollars worth of animals that he can't do anything with right now. Which means he has made ZERO profit for those jobs. No profit means it's hard to get supplies in your shop, pay your bills, etc.
I don't know if that is what's up with your guy but those are some of the headaches that they go through.
And No that is not an excuse for not telling you the right time. But maybe it will help you understand what they are up against.
