I am thinking about building a 4 x 6 hunting blind and was just curious how you guys handle the seam on the 6' wide side. I am interested in knowing the best way to do this.

Ever seen board and batten siding. That's how I do mine. But em up and use a batten to cover the seam and caulk. I just have the 2 foot section offset. Doesn't bother me, But if you are picky I guess you can center it but it is a waste to me. Deer don't care about symetry.

I would run the plywood sideways. This way the seam is horizontal and you can use the metal edging that goes behind the top sheet and over the bottom sheet to keep water out.
