Anybody ever done it? Was thinking about smoking one for mothers day, I have never smoked fish before. I heard cherry wood is good to use on fish, I know where I can get that.

I kinda followed this recipe, it was very good. I smoked it with cherry wood. Smoked some asparaguses with it, that worked out nice. Just seasoned it and wrapped in foil.

butcher paper, dont worry about the waxy side, it just adds to the flavor

You can buy Cedar planks from most cooking places and some grocery stores. Just put the planks on the grill, Salmon on top and cook until fish is flaky.

Just make sure you soak the planks in water for a while before putting them on the grill.

we bought some "high mountain" salmon seasoning, its GREAT, just sprinkle with that, some dill & a thin slice or 2 of lemon & smoke/grill

My wife and I go to Alaska every year to do some halibut and salmon fishing. While we are there we try all the differant items made from salmon (stay away from the salmon jerky- its GROSS!!). We like the salmon smoked with ALDER wood. The processor said they make it both ways- with actual smoke & by placing the salmon sides on a 1" thick ALDER board. This year my wife and I plan to bring back (or ship back) some smoked salmon. Hopefully we will be able to use the salmon WE catch.

most fishing places up there have a proscessing place right there on the dock that will cut up your fish the way you want & they ship it so that it arrives home when you do

Woods that are good to use for smoking fish are: Apple (or any other fruit wood, peach or pear) pecan (or other nut wood but that is most common around here)
What we are discussing here is a hot smoke, that will cook the fish, just like when we say 'smoked' meat on the grill. Hot smoked meats are NOT preserved.
True cold preservation smoking needs cooler temps and does preserve the meat, but does not cook it.

I have found papers big enough...........they are hell to keep lit tho
