Hey moderators! Instead of having a bunch of posts about processors in a select city, let's post them all in one post and put a sticky on it. How bout it? I know lots of folks are looking. I don't want it to turn into an advertsing thing, but reccommendations would be helpful.
I'm looking for a good processor because the one I used no longer does deer, he went kosher! I live in Dallas and hunt near OH Ivie, but wouldn't mind using one somewhere in between if they were good.
I just figure if we made one big post, we could leave it up for at least the first month of the season to help folks out everywhere.

Some of the best stuff I have ever had. Took my sons deer there this weekend. The only thing I have gotten from there that was not good is the tamalies.

Lander's in Garland: He has a Pawn Shop with the Processing Operation attached. You get your own deer back but they send their sausage out to Ft Worth but it is pretty good.

That's me
I skins em and take the tenderloins and backstrap for later I quarters em I grind em up with some hog quarters about two hog to 1 deer depends on how fat the hog is and how lean the deer meat is
then I add cheese, Jalapenos and summer sausage mix from Koch Usually twice too much summer sausage mix per pound
then I pack em in casings and smoke the hell out of em
start at 150 degrees and go up by 10 degrees per hour until you hit 180
poke em with a thermometer and if there at 165-170 inside there done
take em off and rinse em down in cold water to stop the cooking
Eat like a KING ! ! !

I process most of my deer myself as well. Otherwise we use Hibler's in San Saba.
Miles Processors in Miles,Tx is very good. (middle of nowhere) So is the place north of Fairfield, can't remember the name, but very good results. (Wortham area?) Didn't like any of them around Evant, Tx. when we hunted Coryell Co. That's when we started doing our own.

Detroit locker plant, Detroit Tx. Run by Menonites, very clean and prices are good. Had 1 processed last year. Straps butterflied,steaks cut, hamburger , 1 hind quarter into jerky for $75.

Harvest House Farms in Johnson City, TX. Really good jerky (rivals Whittington's in same city), and award winning sausage. Plus, they're family owned, and you know you're getting your own meat back (important to me, since I take great care with my venison prior to processing).

Gotta agree with Gunslinger about Fischers in Muenster. They make killer sausage. They are also pretty darn expensive.

Hey psycho0819,
We have a lease in San Saba and have used Hibler's. What's your opinion on Hibler's? Honestly, I don't care for it much. The facility seems a bit nasty looking. The summer sausage isn't that great either.
If the weather permits, I usually take my deer to Fischers in Muenster, but during warm days I just run them over to Hibler's simply because it's only a 15 minute drive from our lease.
Do you know where the next closest processor is near San Saba, beside Hibler's?

Closest for us (south of town) would be Lampasas I imagine. Maybe Cherokee if they have a processor in town.
Hibler's is not as bad as some places I've seen. I feel very confident that I'm getting my own deer from him. That's a plus for me. I personally don't care for just about any of his sausages. Most guys on the lease rave over it. I am the only non-drinker on the lease though,LOL. They do make some very good jerky on the other hand.
I would rate them average. I've seen better, and alot worse.
Where around San Saba are y'all huntin'? We're south on 1031 til the pavement ends and turn right. About 15-16 miles out of town.

I usually only take him 1 deer a year. And on that one I have them pull the backstraps and grind the rest. That gives us enough ground to last the year. I cut up the others myself.

Dozier's in Fulshear. Anybody know if the Columbus Smokehouse is still in business? Haven't been there in almost 40 years, but they always did a great job for me.

Let's go ahead and make this a sticky - maybe cut down on the threads...and bandwidth. 
I have another one - Dodd Processing in the Texarkana/Redwater area. $55.00 and do a great job. Hunter is required to skin the deer - they'll do the rest.
