I do my own except for the Summer Sausage but I've had sausage, jerky, and Summer Sausage from all four places above and they all are very good.

My Wife and I process our own and love doing it. Burger, pan sausage & links usually. I may try some summer sausage after this season. I have a smoke house that will hold 100 links, so the smoking is also done by us, which is also a good excuse to drink a few beers...hehe

Diamond P in Clarendon is the nearest I know of, but I think there is one in/near Wellington at a ranch. I haven't been there but I've heard that.

Griffith's Taxidermy in Burnet, great processor and a better taxidermist. People travel from near and far for his work.

Dziuk's in Castroville and Jackowski's (Uvalde Meat Processing) in Uvalde. Never taken a deer to Penshorn's, but have had stuff from there and it was excellent. Also, Woodbury's in Ingram has awesome jalepeno cheese sausage and great dry sausage.

I will be going to Fischer's in Muenster this year.

I will not be going back to Hamilton's in Weatherford, though they do have pretty good summer sausage.

Last year, my buddy and I each dropped off a doe on the same day at Hamilton's. 4 days later, his was ready for pick up. Mine wasn't. No biggie. About a week after that, my buddy dropped off a buck for processing. Mine doe still was not ready. Called them and they gave me the run around and couldn't find my ticket. Called me back later and said that they found the ticket and would have ready asap. A few days later, my buddy picked his buck up from processing. I called again and questioned as to the whereabouts of my meat. They said, "come by tomorrow and it will be ready". Picked it up... a VERY small box. Took the box of meat by my buddy's house to see if he could compare it to the amount of meat he recieved from his doe. Said it was about half of what he recieved.

They lost my meat and then scraped together a small box of meat from other people's deer.

I realize that things happen. If they had just been honest and made it right, I would definately be going back. They weren't and I won't.

didnt read all the way through the post...but HALLS in COLEMAN is excellent and have great prices...turn around during the season is about 7-10 days.

i always take 1 deer a year to either locks deer processing or greens sausage house for summer sausage and dried sausage sticks. all the other dear i shoot i make my own sausage.
