My last rack I thought turned out great but just wondering how everyone else cooks theirs. Here is how I did mine. Charcoal Grill to 275-300 1. Cake pan 1/2 filled with water and metal rib rack over the top. 2. Placed ribs on rack seasoned and covered with tin foil. I cooked the ribs covered for 3hours 30 min. 3. Uncovered and placed on grill rack, and added soaked Hickory chips to the charcoal. I did this for 1 hour. The temp was still around 200. 4. Sauced them up with some Stubbs spicy for 45 mins. Then pulled them off. I thought they turned out pretty good just wondering if I missed a step. |

I think you pretty much got it. The water tub helps defect the heat, and sometimes that is needed, I try to avoid the water, just kinda messy, I side fire box is better. But I have a gas grill, same kinda situation you got, but I turn the heat off on one side, and that is the side I put my ribs, so the heat is indirect that way. Mines pretty simple. Rub 'em up with Pork rub, Garlic powder, pepper and brown sugar and let them sit in the fridge for about 4 hours. I cooked them in the pit for 3 hours using hickory between 225 and 250 degrees and then cover them with tin foil and let them cook for another 3 hours. Comes out good everytime. |

I rub mine down with a mix of brown sugar, red pepper, garlic powder, salt, pepper and season all, then wrap in foil place away from direct heat and cook for about 5 to six hours anywere from 250 to 325, the temp I cook at usualy depends on how fatty the ribs are more fat more fire. matt |
