LOL, you know when I found it, I called the youngest over to watch it with me. I guess that's what I liked best about it.

That’s a nice 101 video for sure, they mention some very important basic points, the only thing I disagree on is how they clean the dove, lol. That guy would start breasting one bird, then stop and cut a wing off handling the scissors with his bloody feathery fingers, then breast a little, then cut the other wing off, back and forth with the scissors… 
First thing I do is cut all the wings off ALL the birds, then breast them, then clean them all off and bag’m. That back and forth business with the scissors is for the birds.

I used to rip the wings off the breast bone by hand, it always seemed like one wing came off easier than the other, and one wing rippin the breast meat in the process, but shears is the way to go for sure, they snip right off.

Well, if you plan to leave the breast meat on the breast bone, you have to take the wings off the breast bone eventually, for me it is easier to do it before you breast the bird, whether you use shears or not. So I have always run thru all the birds first to take off all the wings, then when you go back to breast them, when you stick your thumb under the breast to grip it, you can pull the rest of the carcass away very easy with the other hand, I loop thru all the birds with this process, then I clean my hands from the blood and feathers, then give the birds a final wash.
But shears are the only way to go, they make them specifically for cutting off dove wings (they have a little grove in them), I got mine at Academy for pretty cheap I think, I wanna say less than $10 but really can’t remember. But if you guys are not using shears, I would give it a try!

I've never used shears but I could see how they would help. Then again I never really stopped in the middle of cleaning doves and said...man I need shears. I really don't think I need them. What I normally need is more water to wash my hands after.

I didn’t use shears till a couple years ago, somebody let me use theirs, then I had to have a pair. Pulling the wings off is not hard, but it seemed to me that one wing was always harder to get off then the other, one wing would snap right off at the joint, the other is stubborn, and ends up ripping the breast, or leaving a long dangling bone.
But with shears they just snip right off, no mess, and your clean dove breast looks nicer with a clean cut at the joint. It is probably not much faster, but it is easier, cleaner, and in the end, your dove breast will look better.

I always bring one of the big water containers, probably 2 gallon, then ones that are like rectangular shape with a handle in the middle and water valve on one end. This is plenty of water for many hunts, you can set it on a tail gate and open the valve just a little so you get a constant flow of water at the desired level to clean your birds/hands.

Didn't read all the comments...but
I clean the doves differently...
Rip the head off, rip the wings off, then shove my thumb in it...and then pull it apart...
Takes amount 1 minute...
His way was way toooo long!

I normally fill up an gal milk jug with water and take it. It's normally enough until everyone else wants to wash their hands too.

Man I got it down... leave head... just peel back feathers at base of breast, poke thumb in and peal breast out. Then you have the head, wings, tail and rest of the bird in your left hand and only the breast in your right hand. (It is still attached to the wings.) Have your buddy with a serreated knife blade and get him to hold it still and facing up with the blade. You just slide the wings across it where it connects to the breast and you are done. My buddy and I did 30 birds like that on opening day last year in about 10 min. It's super fast and easy.

I pluck them, cut off the feet and head then reach in and grab the guts. I can do a limit of birds in a little over three hours.
