Man I got it down... leave head... just peel back feathers at base of breast, poke thumb in and peal breast out. Then you have the head, wings, tail and rest of the bird in your left hand and only the breast in your right hand. (It is still attached to the wings.) Have your buddy with a serreated knife blade and get him to hold it still and facing up with the blade. You just slide the wings across it where it connects to the breast and you are done. My buddy and I did 30 birds like that on opening day last year in about 10 min. It's super fast and easy.
