I didn’t use shears till a couple years ago, somebody let me use theirs, then I had to have a pair. Pulling the wings off is not hard, but it seemed to me that one wing was always harder to get off then the other, one wing would snap right off at the joint, the other is stubborn, and ends up ripping the breast, or leaving a long dangling bone.
But with shears they just snip right off, no mess, and your clean dove breast looks nicer with a clean cut at the joint. It is probably not much faster, but it is easier, cleaner, and in the end, your dove breast will look better.
