Anybody got any good hamburger recipes? Specifically, what you put in the meat before you throw it on the grill.
I don’t have anything really good I can brag about, I always put grated onions in there, have tried the onion soup packages thing, don’t really like that, have tried mixing in BBQ sauce, A1, etc…that stuff tends to make it fall apart.
I guess I’m looking for a good spice or something.

flour will help keep the meat together...
dice up some onion and 1 serrano pepper per pound and will be a burger with some bite, and of course the all important lowery season salt

I mix nothing in the meat. I try to keep the meat pristine as the more you work it the tougher the burger is. Make your patty and pat on some Cavender's and let set in fridge for 30 to 60 mins. My 6 kids (29 to 14yrs old) love mine and think it is some secret and I let them think that it is a guarded secret.

I just put seasoning salt(Lowry's or McCormick) and some worchestershire sauce and then really compress the meat well while forming a patty.
Then I put them in the freezer just long enough for them to begin to firm up. This seems to helps keep them together better on the grill.

I love the hamburgers in New Mexico
Green Chili burgers 1 1/2 lb groung beef 1 clove garlic dash black pepper 1 tsp.groung chili 1/2 tps salt 1/2 cup monterey jack shreeded 1 can green chiles drained 4 slices purple onion tomato lettuce fresh salsa of choice
mix beef,garlic,chili,salt,pepper in a bowl.shape four patties and broil or grill to desired doneness.toast your buns top patties with shredded cheese, green chiles,lettuce,onion and fresh salsa. Enjoy

I have lowered myself to just using the frozen patties from Sam's now. They seems to taste juicier than any homemade burger and there is NO prep work which is why. Just throw some salt and woistershire sauce on and cook. Not as fun but it is so much quicker when you have two kids.

I use a 90/10 ground sirloin..5lbs of meat and mix it with 1 lb of crumbled feta or bleu cheese..salt and pepper as you would like and5 tablespoons of heinz 57 steak sauce..mix together well and make your pattie..i usually get around 12to 14 patties.. what patties i dont use I just freeze and cook great from frozen..Also will add one diced jalapeno per pound if I know the group does not have a sissy around and cant stand the heat..de seed them and it will not be as hot..

A little cavendars, worchestershire, and ground up saltines. Let 'em sit in the fridge for a bit to firm up.

Tex Joy, Pepper, Garlic salt, Bread Crumbs and an egg or 2 to help hold them together. Sit 30 Minutes in fridge!

fatless grd deer meat, bacon grease(to add just a little fat & flavor)season salt, pepper, bbq sauce, maybe some onion & or garlic pwdr & grill on open flame....key is to make them big cause the grd deer wont shrink..my kids LOVE them

Chopped green onion and the dry Lipton Onion Soup mix! Put half of the soup mix directly in the burger meat. Mix the remainder with a little water and baste the patties once on the grill. Cook to medium doneness.
This is really good with ground turkey too, but you will need to add some cracker crumbs.

Hey Everyone, Just saw the post and figured I would add my recipe and some pic's. Give it a try I promise you that it wont dissapoint.
Get 1/2 pound of ground beef and 1/2 pound ground chuck per person (Very important to mix the 2 as it cuts down on fat/Grease content and helps the 2 hold together.
6 lbs of meet should give you 12 burgers at 1/2 lb a peice.
Mix 6lbs of meat with 2 eggs that have been beaten add 1 teaspoon salt, 2 teaspoons black pepper, 3 cloves crushed garlic, 1/2 a medium sweet onion chopped well, 1/2 cup worsichire sauce and 1/3 cup of your favorite beer (DO NOT USE LITE BEER MAKES BURGERS TASTE BITTER)the worchesire sauce keeps the burgers incredibly juicy. Now hand mix all the ingredients together VERY WELL. form into 1/2 pound patties ( we actually do 1lb patties at my BBQ's as it only takes 1 burger to fill ya. Now heres the biggest part. Shhh no one tell, I put a surprise in the middle. Using a sharp knipe cut a 2 inch slit into the middle of the burger from the outside edge. Stuff a little of your favorite cheese in and re form the patty making sure to seal the edges back closed now when the burgers cook the cheese will got warm and gooey. Lightly salt and pepper the tops of the burgers and sprinkle a bit of paprika on as well grill. make sure to grill over medium heat. they take about 15 minutes to cook as they are thick. when almost done add some more cheese to the top.


in this pic you can see the cheese melting out from the inside of the burger after its done.

If you have any questions I will try to answere them asap but I only get to use the media center 1-2 times a week and thats when I talk to the wife. If I have extra time Ill sign on and check. Just a tip, poke a hole in the center of your burgers. This way, when they hit the heat they will dray up the hole and seal in the juices. It mainly prevent the shrinking up to a meatball effect.
Blend an onion, 3 cloves of garlic, worchester sauce, slice of bread crumbs, and Tony's. Mix per pound of meat and then make pattys.

Venison/pork mix Pepper Jack cheese or cheese of choice Jalepeno bread Crumbs
cut up cheese and jalepeno, mix meat, bread crumbs, cheese and jalepenos. Throw on grill with low eat. Take time cooking and it is very tasty.

I use an 80/20 mix of venison/beef, Lowrys garlic salt and Kikoman's Teriyake (sp) sauce. After ther patties soak in the marinade for a while, I cook them. I pour the remainder of the marinade on the patties as they cook.
Simple, but really tasty.

get a jalepeno pepper and bout 1/2 a big onion, chunk em in a food prossessor and mince em up real good, put in with the meat, then about 1/2 a package of bacon, chunk it in the food prossessor and mince that up, dump it in the venison, mix it all up in your meat real good, the bacon makes em stick together real good and adds moiture and good flavor

Okay Guy Here's the total meal plan for burger. Feeds 4
Set Oven or grill to 350* to preheat.
House Seasoning: We'll start with the seasoning, mix 1 cup of salt with 1/4 cup of Black Pepper, and a 1/4 cup of garlic powder. Your not going to use all of this, but it's great on about everything. Store in a covered container on the counter.
1 1/2 pounds Deer Burger / Hamburger (Not chuck because you need a little fat in this meat) My Deer burger is 75% to 25% Beef fat.
1 cup bread crumbs (cracker crumbs are good too)
2 eggs (hand beaten in a side bowl)
1 cup grated cheese ( I use mild Cheddar, but Mexican 4-cheeses blend works too)
1/2 cup chopped green pepper ( This is a great place to use banana peppers)
1/4 cup lemon juice
2 teaspoons of your house seasoning ( Made above)
Heavy duty Alu. foil
In a large bowl hand mix all of this in the order it's listed, divide into four parts, pat into pattys that are oval shaped. place each onlarge sheet of foil and set aside.
1 large Onion
4 Red potatoes
8 Slices of bacon
Slice 1 large onion and place a couple slices on each burger patty,
Now take 4 red potatoes and slice them kinda thin, placing one on top of the onion on each burger patty
Then cut 2 slices of bacon in half, and place on top of each of the burger pattys, Close foil like a tent over the top and roll ends.
Bake in the oven for one hour, or until potatoes are soft.( Be sure you place these on a cookie sheet in the oven) they are very juicy burgers, This makes a couple meal for 4 people ( unless you eat like I do, then it's only going to feed three)
Out on the grill these will take about 1 hour and 15 mintues.
Cooked (under/in hot coils) of the campfire, cover the foil about 3 inches for about 1 1/2 hours. Turning after 45 mintues.
After the Burgers try a little "Camp Apple's" (crust free pie)
4 tblsp butter 1/4 tsp ginger 4 Golden Apples(sliced0 3 tblsp Brown Sugar 2 tsp lemon juice 1 tsp Ground Cinnamon 1/4 tsp Nutmeg
On med to med high warm butter in skillet/Med fry pan, then add sliced apples,ginger and lemon juice cook for 5 mintues, while stiring, then Add BrownSugar, Cinnamon & nutmeg and cook another 3 or 4 mintues, Your apples should start to become soft. Your done serve with Ice cream while the apples are still warm. Or cool and just dig-in.

Yes Sir, or banana peppers, You could also use jalepeno peppers, but just a few, with the rest being bellpeppers.
