I've got a 2 year old yellow lab that is doing great thus far with all the basics. He is also retrieving very well. I would like to start him on hand signals for retrieving, but I have not idea how to get started. Any help would be greatly appreciated.

I guess I'll chime in on this one:
(Disclaimer-- I'm not an expert, but this works for me)
If the dog is doing well with verbal commands, hand and whistle signals should be pretty easy.
When giving a verbal command, start to use a hand signal every time you use the verbal command. Start using a whistle command immediatley after the verbal and hand signal.
Example: I have Springers and the verbal command for sit is "HUP" I use the first two fingers on the right hand - Pointed just over the top of their head, which is followed by a single long whistle blast. After a while all you have to do is just the hand signal -- unless they are in the field -- then all you need is the whistle. Then -start mixing it up, give just the whistle or just the hand signal and see how he reacts. Also a key to making this work -- A command is just that- a command, not a request. You must enforce a command with compliance. If not you dog will only comply when it wants to.

I've got him sitting, staying, and downing all on hand signals alone. What I'm confused about is when the dog is away from me in the field. I would like to be able to give him hand signals to help him retrieve the bird. Such as right, left, back and forward.

You need to force back to pile first. Everything should be on a 20 to 30' check cord. Teach back first then your overs.

before you start forcing to a pile, is he Force fetched? Sounds like you need to get with someone or some videos.
