BULLET!!! Really liked the picture of the chicken all thru the process. LOVED your choice of "basting sauce" even better! (OK- let me have it for my choice of "liquid refreshment". I've heard it before and can handle it quite well)

Whatever beer you are drinking that day will do. I have had it with many different type and they are all good.

On my smoker, I slow cook everything between 225 to 275. I'll cook ribs and sausage about 12 hours, and chicken 4 to 6 hours, just when ever it looks done, and there is a rule when I cook, no one is allowed to rush me!!

Good looking bird. This weekend is a pork butt. By the way if you shop at Wal-Mart check the dates on the meats. I bought a pork butt and it was a week out. I will never by any meat at wal-mart again.

Guy, that's a good tip about the foil cap. Will try that next time.

What is that in the top of the chicken to seal it off? I've used sausage to seal them off and it's great.
Also, I love using a dark beer, apple juice, or wine in a can. They all give different flavors and great taste.
