Audad meat?

Is it any good? I read somewhere that its not so bad but.. y'all know how that goes!

Our experience is that it makes good jerky, if that tells you anything.

Well like so many others I have my own thoughts on the subject. Personally I have a problem shooting any animal I can't eat. That's just me and I can't judge anyone else on what they do. If you love the outdoors and hunt then you are a friend of mine. For years I wanted to shoot an Aoudad for the mount but everyone said the meat was horrendous. I had a deal on a hunt for an Aoudad in the 34-35 inch range that I could not pass up and did shoot. Having a half body mount done on him. Awesome animal!!! Number 7 in the state record of exotics. I had sausage, summer sausage and pan sausage made from him. Took the sausage to my wife's family get together. These guys hunt year round and all over. Have thrown out many Aoudad carcasses over the years, I said hey I brought some sausage from a new processor I'm using to see what y'all think? He is so close to my house I told him to just open the door and yell at me when it's ready. They loved it!! All said great sausage!! When I told everyone it was from the Aoudad I shot you could have heard a pin drop. I say try the meat made into sausage and you can't go wrong.

A big mature ram which is typically 10+ years old is chewy and gamey tasting BUT the rams or ewes we've taken outside of that aren't too bad. I was a firm believer in not wanting to even trying them but slowly they've been growing on me. Have had it many different ways and the way I liked it best was chicken fried.

Hard to go wrong with chicken fry! Might have to try it, at least make up some sausage.

Just make sure if it's a ram or old ewe that you double tenderize it. Some of the toughest meat on the planet. But tenderized or ground it's awesome tasting.

we've had great luck chicken fry or roast. it actually tastes good, just tougher. these are older rams too.

I was expecting to hear how horrible it is, I'm the same way as texastrophyhunter63, if I can't eat it I probably ain't shooting it...probably isn't like oryx but might have me some goat sausage in my future!!

I shot a old female a few years ago. The guys that were in camp said they weren't any good. So I wrapped sum steaks in bacon and did them on the smoker grill. I will never let one walk again!! At the worst they make great sausage.

We shot a few big/older rams. They were about like deer meat in the tender/moist category but they had a taste/smell I did not care for. I wouldn't want to eat them.

I've heard mixed things about aoudad meat some say it's good if done correctly others say just leave it for the buzzards.

Granted we had mature rams, but we had two of them gutted skinned quartered and on ice at the house. After sampling some chicken fried we found a location to feed the buzards. I did euro's on the heads and gave the hide to a friend.

Yep. Happened to me too. Heard all the stories so I just kept one backstrap and donated the rest. I'll throw deer in the garbage if it means I can eat aoudad now.

in 98' my stepdad killed an aoudad out in Junction and we ate it


I think sometime around 2006 I finally got the taste outta my mouth....

It can be a little tough. I wet aged mine for 7 days and then tenderized as well. It was pretty good chicken fried, and as breaded cutlet. Great pan and summer sausage mixed with 1/3 pork. The chile I made with cubed shoulder and ham were excellent- no beans of course!
