been eating my red deer for a few weeks now and it is awesome
someone talked me into having the backstraps and tenderloins left in and the processor cut them into bone in chops..
very pleased that i did as it i makes a great meal.

These Hybrid Cross Cows normally weigh about 250-300 pounds or so on the hoof. Expect at least 1/3 boned out meat, you know the general rule after the skin, bones, guts, etc!
