I know what I can do with that leftover browned sausage and these tortillas!! smile

Breakfast taquitos, with sausage, salt/pepper/garlic and onion powder, cumin and red pepper flakes. Add in some cheddar, mozzarella, beans. Pico and guacamole to dip in!!!

400 degrees for 20-25 minutes, depending how crisp you want them.

Blank did you have to warm the tortillas up first so you could roll them? I know corn tortillas can break pretty easy

I do them in the 350 degree oil, 1-2 seconds per side, so they are half cooked and roll easy without breaking. Sometimes after they are all rolled, I just fry them. The wife prefers baked over fried. Happy spouse, happy house!!

I like the breakfast taquito idea a lotfood . I do the same as you and they still want to break sometimes. I`ve tried the microwave with good some success as well. I`ve wanted to try the oven, but didn`t know if they would get crispy enough for me. I stick a toothpick into 2 of them to hold them together while frying.

I had a tough time rolling yellow corn, so I went to the white corn tortillas and it was better. Great idea on the toothpick. I'll have to remember that. They always want to roll back on the done side when frying, over doing it a little bit!!
