POTATO SOUP RECIPE - 11/12/13 07:59 PM

Im really wanting to make some potato soup for dinner. Anyone with some recipe ideas?

I have a good potato chowder recipe at the house. Was actually thinking of making some myself. I'll post it up when I get home tonight.

I think this is the best I've ever had.


Ingredients:
1 (30 oz.) bag frozen hash-brown potatoes
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
Garnish: minced green onion

Directions:

1. In a slow cooker, combine potatoes, broth, soup, onion, and pepper. 

2. Cover, and cook on low for 5 hours.

3. Stir in cream cheese, cook 30 minutes, stirring occasionally, until combined. 

4. Garnish with green onion.

I also like to throw in 5-6 slices fried bacon.

How I made it...simple


peal potatoes
cubes of chicken or chicken stock
boil until soft
Take a few out and let cool then dice into desired size and add back in at the end
mash the rest inside the pot and add milk (little heavy cream if you have it)
grated white cheese and simmer until it completely desolves
chopped green onions or scallions
salt and pepper
I add Knor if you have that available if not its not a big deal
I serve it in a bowl and top with a few croutons and some fresh freen onions or scallions and you can add some bacon or bacon bits if you like. Good on a cold day.

Ended up using parts from several recipes.

ham steak diced
venison sausage diced
onion
celery
Browned all of these well in little olive oil. Added couple Tbls flour and cooked 10 minutes.
Added 8 cups chicken stock and cooked 15 minutes.
Added 8 russet potatoes peeled and diced. Cooked until tender. Put ham/sausage and potatoes in a blender with some chicken stock. Blended until all was pureed. Added back to pot. Added 2 cups milk, 2 cups sharp cheddar and 2 cups Monterey jack cheese. Lots of black pepper and some worchestshire sauce and hot sauce. Cooked low for 30 more minutes and served with garlic bread.
Came out really good. I added a little more hot sauce to mine.

Baked Potato Soup
INGREDIENTS
• 3 bacon strips, diced
• 1 small onion, chopped
• 1 clove garlic, minced
• 3 tablespoons all-purpose flour
• 1 teaspoon salt
• 1 teaspoon dried basil
• 1/2 teaspoon pepper
• 3 cups chicken broth
• 2 large baked potatoes, peeled and cubed
• 1 cup half-and-half cream
• 1/2 teaspoon hot pepper sauce
• Shredded Cheddar cheese
DIRECTIONS
1. In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.

This is the one we use and really like it

Yea, folks had one years ago, will dig it out later, some older timers out there, anyone remember the farm/ranch radio show in San Antonio about 20 yrs ago, fellow named Bill McReynolds hosted a 45 minute show about all farm/ranch reports, he had a posted or before inet came around, and recipe for pot of potatoe soup! Any one out there have that? Sent numerious mails to the radio station WOAI in SA and its a dead in street!

If its out here please someone post it here!
