Hog Backstrap - 10/10/13 04:10 PM
I'm looking for ideas to cook wild hog backstrap. I've got plenty of recipes for the quarters and always enjoy those, but I've never found a recipe I love for the backstraps. Any help is appreciated, thanks.

You can make pot roast or carne guisada out of it.
Season with a little garlic powder and black pepper then wrap tightly with good hickory smoked thick cut bacon and put it on the grill

Marinate in soy, italian dressing, mustard and your fav seasoning. Grilled indirect at about 275-300 for about 45 minutes.
Serve.
