I just brine overnight and then slow roast (wrapped with bacon of course).

I like to grill it and use a raspberry chipotle sauce.

One can of adobo sauce mixed with one jar of raspberry preserves and stirred together real well. Makes a nice brushed on glaze toward the end of grilling time and also makes a good dipping sauce.

I don't know about marinade but my son likes to glaze it with homemade plum preserves when smoking. I have to admit it is ham dandy
