I like the other posts on here with stuffing backstraps, wrapping with bacon and grilling but does anyone have any ideas of alternative stuffing and what to marinate the strap in before cooking?

Butterfly, slap some cream cheese, and jap strips and pin with bacon wrap

I have oryx in fridge for tonight that has been marinating with Adams fajita seasoning and vegetable oil that will be awesome grilled tonight!

I leave it for 24hrs in fridge before throwing it on the grill.

OK, dumb sounding question, I am sure: I understand how to butterfly backstrap into small steaks, but I'm thinking that is another technique of butterflying to make stuffed backstrap? Do you cut it lengthwise from the side almost in half and open it that way? Please explain it to me. Thanks!
