Mods, feel free to move if you feel necessary...seem to be more opinions in the deer forum.

I have 50lbs ground (70% venison, 30% pork fat) and 50lbs 100% ground venison. Will be making smoked sausage and a batch of hot links from the mixed, but wanted some ideas other than burger for the other 50lbs of straight venison.

I generally like seasoning my own, but are there any truly great pre-packaged seasoning mixes for smoked sausage, breakfast sausage, hot links, summer sausage, etc?

Have made a lot of breakfast sausage using old plantation mix ovdr the years. We usually mix it about 1.5X the recomended amount and sdd ground red pepper to kick it up a notch or two.

Another thing if for burgers grind with about 15% bacon for premixed bacon burgers, also makes for one great chili mix.

Do not forget you can use the ground with no other additives other than seasoning for slimjim type jerky. works great for that

Hi-Mountain makes a good product. Made a batch of Venison German Sausage,
from their kit. Follow directions closely. We enjoyed it.

I mix 25% bacon with my venison burger. You won't be disappointed.

I agree with the bacon. I use maple smoked bacon, sage and cracked red pepper.


Sometimes it's hard being me! But somebody has to do it.

Bacon does work good in the burger, I also use the high mountain (original) for my jerky , but for my sausage and sticks I used the LEM, I like to mix 1 package of hot and 1 regular, (yes 2 packages) for 5lbs.

Also use the grind for tacos and sloppy joes.

Brown it, season it with Italian seasoning, simmer it in sauce for about an hour, put it in lasanga.

Bratwurst, I used the LEM bratwurst seasoning and used bacon ends as the fat for some brats I made out of my oryx. Very good and all the neighbor kids ate em at cook outs too.
