What is the best knife set for around $80-$100. Mainly for meat processing. Best bang for the buck

Just buy one really good knife (I use a chicago cutlery knife I've had for years). Just find something with a medium blade, 8" in length that fits your hand well. Hone it after every use and it will cut for a long time.

Yep, buy one good knife. I grab either my 8" or 9" chefs knife for everything. I use wusthofs.

I use Henkels for my kitchen work. The chicago knife is just for my deboning and pre-grinding work. I don't wanna hit bone with my henkels.

Messermeister makes some good knives. You really don't need a complete set. I watched a guy process an entire deer using a filet knife.

Get one or two real good ones. The rest of the set will just sit in the block anyway.

Like stated above, you just need one good knife. I am processing an elk now and all I'm using is a 6" boning knife!

I generaly use either a dexter russel fillet/boning knife. I got a nice boning knife for standing in a buddies wedding, not sure what brand it is, but it is sharp as a lazer.

Like said above maintian the edge, dont use till dull as a spoon and then sharpen. I keep a steel handy and will give it a few licks when I notice it isnt as sharp.

I ran a meat market and cut meat for 25 years and almost everyone I knew used FORSCHNER KNIVES. They are the only knives I use today. This knife is my favorite.

I have sets of Henckel and Cutco and they are great knives. If you get a Dexter Russell you will use it all the time. I think they run about $20.

I know you will ennjoy it. I probably have 20 or so of them of all sizes.I still have the first knife (forschner) that I bought when I was learning to cut meat at winn dixie in 1980. It had a 5 inch blade with a wooden handle.

Forshner... I use to work at a butcher supply and this is what sold the most in Texas and the exports we did to Mexico.
I would say all you need for hunting needs are these two.

I'd personally buy a decent set of knives like the chicago cultery and then spend some money on a good sharpener. I use the chefs choice electric and I can sharpen every knife in my house and my moms sharp enough to shave with in about 10 minutes.
If I was going to spend alot of money I would just buy one or 2 really good knives like a Henckel or somethig... jmho

From my experience an electric sharpener will cut the usable life of a knife in half or more, get it sharp, then use a steel and keep it sharp will last lots longer.
